Yes it's me! Hi there, welcome to my page. My name is Tina, I'm married with one grown son and 2 grandsons. I love computer painting, crafts of all kinds, soapmaking, cooking and canning, reading, and corresponding with my e-pals.
Below are some great fall recipes....give them a try and enjoy!
Tina's Carrot Cake

Preheat oven to 350F.

With a mixer, cream together:
1 cup butter or margarine
1 cup granulated sugar
3/4 cup dark brown sugar
Add and beat well in this order:
2 tblsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tblsp ground cinnamon
1 tsp vanilla extract
6 eggs
1 cup of unsweetened apple juice
Beat 5 minutes.
Add and beat in well:
3 cups all purpose flour
Beat 5 minutes.
By hand, stir in:
3 cups grated carrots
1 cup chopped walnuts
1 cup raisens...or any dried fruit chopped in small pieces.

Pour into a large greased cake pan and bake at 350F for 30 to 45 minutes or until a toothpick or knife inserted in the center comes out clean. Don't over bake or it will be dry and tough!
Cool and frost with a butter cream frosting or a cream cheese frosting.

Tina's Best Chocolate Chip Cookies

Preheat oven to 350F.

Cream together:
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup dark brown sugar

Add and mix well:
1 1/2 tblsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
2 eggs
Add and mix well a little at a time:
2 1/2 to 3 cups all purpose flour
Then stir in:
1 pkg semi sweet chocolate chips
1 cup chopped walnuts or pecans
1/4 cup toasted coconut

Drop by rounded teaspoonfuls onto a greased cookie sheet and bake 8-10 minutes at 350F or until golden brown.
Makes 4-5 dozen cookies depending on the size.

Tina's Oatmeal Crunchies

Preheat oven to 350F.

Cream together:
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup dark brown sugar

Add and beat well:
2 tblsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp vanilla extract
2 eggs

Stir in:
3 cups rolled oats
1 1/2-2 cups all purpose flour
1 cup raisens

Drop by rounded spoonfuls onto a greased cookie sheet and bake at 350F for 8-10 minutes, or until golden brown.
Makes 4-5 dozen cookies depending on the size.

Tina's Best Peanut Butter Cookies

Preheat oven to 350F.

Cream together:
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup dark brown sugar
2 cups peanut butter..crunchy is best.
Add and beat in well:
1 1/2 tblsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
2 eggs
Add and beat in well, a little at a time:
2 1/2 cups all purpose flour
(optional: add chocolate chips and nuts)

With your hands, roll dough into balls. Place dough balls onto well greased cookie sheet and squash flat with a fork or your fingers. Bake at 350F for 8-10 minutes or until just starting to brown on edges.
Makes 4-5 dozen cookies depending on size.

Tina's Quick and Easy Shrimp Creole

1 jar Prego spaghetti sauce....thick and chunky is best...any variety
1 pound precooked salad shrimp
1 onion, chopped
1 green bell pepper, chopped
1/2 cup slice mushrooms
3 tblsp olive oil
4 cups cooked rice

In a skillet, saute onion, green pepper and mushrooms in olive oil until tender. Add spaghetti sauce and bring to a boil, reduce heat and stir in shrimp and simmer just until shrimp is heated thru.
Serve over rice, with a salad and crusty garlic bread.
Serves 4-6

Tina's Baked Chicken

1 large baking chicken, washed well
1/2 cup melted butter or margarine
1/4 tsp each...garlic powder, chili seasoning, black pepper
1/8 tsp cayenne pepper

Place chicken in a baking dish on a rack so that it isn't sitting in it's own fat while cooking.
Brush chicken all over with melted butter.
In a bowl combine spices and mix well. Sprinkle butter basted chicken with spices and bake at 350F for 20 minutes, baste with butter again and sprinkle with spices again if desired.
Bake an additional 20 to 30 minutes until done and golden brown.
Serve with Garlic mashed potatoes, salad, and crusty rolls.

Tina's Garlic Mashed Potatoes

Preheat oven to 350F.
4 large potatoes, peeled, cooked
4 cloves of garlic, minced
1/4 cup butter or margarine
3 tblsp minced onion
1/4 cup hot milk or cream
3/4 cup grated sharp cheddar cheese

In a skillet, saute garlic and onion in butter or margarine.
In large bowl, mash potatoes and whip with hot milk or cream, add garlic, onions and butter. Whip until thick and fluffy.
Pour into baking dish and sprinkle with cheese and bake at 350F until cheese melts and starts to brown.

Corn Salad
1 pkg cream cheese, softened
1 small jar Pace picante sauce
1 can whole kernal corn, drained

In a large bowl, stir together cream cheese and picante sauce until well combined. Add corn and stir well. Refridgerate one hour an serve. Great with just about anything.....I like to serve with my baked chicken and garlic mashed potatoes!

This one is my painting... Tina's Pumpkin Bar Cookies

Preheat oven to 350F.

Using a mixer, cream together:
1/2 cup butter or margarine
1/2 cup dark brown sugar
1/2 cup granulated sugar

Add and beat in:
1/2 tsp each-baking soda, ground nutmeg and cinnamon
1/4 tsp ground cloves
3/4 tsp salt
2 eggs
2/3 cup cooked, mashed pumpkin (may use canned)

By hand, mix in well:
3/4 cup all purpose flour

Spread in a greased baking dish and bake at 350F for approximately 45 minutes depending on the size of the pan.
Cool and frost if desired. Cut into squares and serve.

Butter Cream Frosting

16 ounces powdered sugar
1 stick (4 ounces) butter or margarine, softened
pinch of salt
1/2 tsp of vanilla extract
3 tblsp milk

Beat together all ingredients until thick and fluffy.

Tina's Quick Chicken Chowder
2 cups cooked,chopped chicken
2 cups cooked, cubed potatoes
2 cups cooked, sliced carrots
1 onion, finely chopped
2 stalks celery, finely chopped
1/2 cup chopped mushrooms
6 chicken boullion cubes
1/2 tsp garlic powder
1 tsp black pepper
3 tblsp butter or margarine
1/2 gallon whole milk
1 can each, whole kernal corn-green beans-and peas, drained
Salt to taste (boullion adds salt, so taste before adding!)

In a large stew pot, saute onion, celery, and mushrooms in butter or margarine until just tender. Pour in milk and add remaining ingredients EXCEPT PEAS. Bring to a rolling simmer over very low heat.....milk can curdle over high heat...doesn't hurt it but looks yucky! When very hot add peas. May thicken with cornstarch if you prefer a thicker soup.
Serve with a green salad and crusty french bread for a marveous light meal. Also freezes well for even quicker meal another time!

Tina's Hot and Spicy Pizza
Preheat oven to 450F.

1 large loaf french bread, cut lengthwise in half.
1 jar Prego Thick and Chunky spaghetti sauce...your favorite variety.
Slices of hot links, pepperoni, ham, hamburger...whatever meats you enjoy most.
Slices of favorite vegetables....onion, green pepper, tomato.
Or choose fruit...pineapple.
How about black or green olives.
Grated cheeses--Parmesan, Romano, colby, sharp cheddar, mozerella......whatever is your favorites, pick at least two.

Spread a generous amount of spaghetti sauce on each half of the french bread. Top with favorite meats, vegetables, etc...
Top off with layers of cheeses and back at 450F until cheese is melted and beginning to brown nicely.
Serve with a big green salad for a meal everyone will love.
Kids especially.....let them make their own!

Tina's Tator Tot Pie
Preheat oven to 350F.

1 pound very lean ground beef
1 onion chopped finely
1 bag tator tots, frozen
1 can golden mushroom or cream of mushroom soup
1/4 cup water

In a round cake pan, pat ground beef down, filling pan evenly. Sprinkle onion on top of meat. Arrange frozen tator tots on top of meat an onions. In a bowl mix mushroom soup with water until smooth, then pour over meat and tator tots.
Bake at 350F until done.....tator tots will be brown and crispy.
Cut in wedges and serve with a green salad and bisquits for a hearty meal your kids will love.

Tina's Best Breakfast Burritos

Brown one pound of good pork sausage or lean bacon cut in pieces. Drain half of excess grease off.
Add one bag of tator tots and cook, allowing tator tots to fall apart like hash browns.
Stir in 6 eggs beaten with 2 tablespoons of milk. When egg is done...top with favorite grated cheeses....I use sharp cheddar.
Spoon into warm flour tortilla's and top with picante sauce, roll up and enjoy!
May also use well chopped ham, add onions, etc...
